Courgette Fritters

Meat-free Monday’s has never been so delicious!

1 tbsp lemon juice
1 red onion
1 courgette
1 carrot
Lemon pepper
Pink salt
1 tbsp almond flour
2 large eggs – beaten
Coconut oil

Method:

  1. Spiralise/grate the veggies.

  2. Place in a large bowl, season with the salt and pepper.

  3. Mix in the lemon juice and beaten eggs.

  4. Add in the almond flour and mix thoroughly.

  5. Use a ramekin to shape the fritters and fry in coconut oil for 3-4 minutes a side until golden and crispy.

  6. Serve and enjoy!
