Blissful Banana Fritters

The festive season has begun and there is nothing but delicious treats everywhere you look – this little pick me up is the solution your problems!!

2 Bananas
1/2 tbsp Agave
2 scoops of Nobó (or equivalent dairy free ice cream)
Handful of walnuts – finely chopped
Coconut oil

Method:

  1. Slice the bananas in half lengthways, heat a large pan with a heaped spoon of coconut oil – add the bananas and cook for 2-3 minutes a side until golden and crispy.IMG_6680
  2. Lower the heat and add the agave, coat the bananas in the syrup and cook until caramelized.IMG_6687
  3.  Add the bananas to a bowl place the nobó on top and sprinkle with the walnuts.
  4. Serve and enjoy!!

If you’re feeling really bold why not add some melted dark chocolate and almond butter!!
