Asian Style Pulled Pork Salad
The perfect summer dish incorporating my Paleo Pulled Pork!
This recipe is Gluten Free, Dairy Free, Paleo & Whole 30 Approved.
1/2 courgette, spiralized or julienned
2 radishes, finely sliced
Handful of rocket
Handful of mixed leaves
1/4 cup pomegranate seeds
Small bunch of fresh coriander
With this salad everything is pretty much done ahead of time – its just a matter of arranging it on the plate before you dig in!
- Firstly, prep the Pork and the Dressing.
- Take a serving bowl and add the courgette in a small bundle.
- Next add the rocket and the mixed leaves.
- Scatter the radish on top.
- Then, pop a good helping of warm Pulled Pork on top of that.
- Sprinkle the pomegranate seeds over everything before pouring the dressing on top of the pork.
- Garnish with some fresh coriander and enjoy!
