Almond Butter Satay Skewers

Almond Butter Satay Skewers

This recipe is ridiculously tasty and you’re going to love it! Chicken thighs make for the most delicious skewers packed full of flavour, ready to drown in the creamy dip, made all the better with smooth almond butter and the griddled pineapple!

This recipe is Gluten Free, Dairy Free, Paleo & Whole30.

Almond Butter Satay Skewers

Print This
Serves: 2-3

Ingredients

  • Ingredients for the sauce: Large handful of coriander
  • 1 fresh chili
  • 1 clove of garlic
  • 5 heaped tsp of Lifeforce almond butter
  • 2 tbsp coconut aminos
  • 2 inch piece of ginger
  • Juice of 2 limes
  • Large dash of water
  • For the chicken: 6-8 skinless boneless chicken thighs
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Pinch cayenne pepper
  • 1 pineapple
  • 1 tbsp olive oil
  • 2 tbsp Lifeforce coconut oil
  • Salt and pepper

Instructions

  1. Place all of the satay ingredients in the food processor and blend until smooth. Place the sauce in a bowl and set aside until you are ready to serve.  
  2. In a large bowl add the olive oil, herbs, and spices with a good pinch of coarse salt. Next, dice the chicken thighs into cubes and add to the bowl, mixing until combined. 
  3. Slice your pineapple into large chunks and heat a large griddle pan with some Lifeforce coconut oil. Cook for 3-5 minutes per side until chargrilled and carmelised. 
  4. In the meantime thread the chicken cubes onto skewers and set aside. 
  5. Remove the pineapple and set aside. 
  6. Add some more coconut oil to the griddle pan and cook the chicken for 4-6 minutes per side until golden and cooked to your liking. 
  7. Serve up and enjoy!
