Nicola’s Nut Butter Balls

I’m really excited to be coming on board with Lifeforce to bring you some delicious recipes using their products.

To kick-off, during the month of July Lifeforce have a super competition on – the #nutbutterballchallenge.

The prize? A nut butter bundle! There are 3 up for grabs, all you have to do is create your very own version of nut butter balls and post a picture on Instagram, using #nutbutterballchallenge and tagging @Lifeforce_IE

Nicola's Nut Butter Balls

Serves: 16

Ingredients

• 100g mixed nuts
• 400g Medjool dates
• 100g Lifeforce Muesli
• 2 tsp Lifeforce coconut oil
• 2 tbsp Lifeforce almond butter (smooth or crunchy whichever you prefer!)
• 1 tsp vanilla extract
• Good pinch of coarse salt

Instructions

1. Place the mixed nuts and muesli in your blender and blend on high until you have a breadcrumb-like mixture.
2. Next, add the dates (ensuring all stones are removed!) and blend on high again until the mixture is combined.
3. Finally add the coconut oil, almond butter, vanilla and coarse salt before blending for a final time.
4. Roll the mixture into balls and enjoy!
