I adore spiralizing veggies and courgettes/zucchinis without a doubt are my favourite vegetable to spiralize – they make for such a simple side dish sautéed up in the pan with things like a Bolognese sauce. Every now and then I like to make them the hero of the dish which is where this recipe was born!
This is great served alongside some crispy chicken thighs!

This recipe is Gluten Free, Dairy Free, Paleo & Whole30.

Serves: 2-3

Ingredients

  • 2 large courgettes
  • For the sauce: Large handful of fresh coriander
  • 4 tbsp coconut aminos
  • 1 red chili
  • 2 cloves of garlic
  • ½ red onion
  • Juice of one lime
  • 1 tsp fish sauce
  • Sprinkle of coarse salt to season
  • 1 tsp sesame oil, for cooking
  • 2 spring onions, finely chopped, to garnish
  • Sprinkle of sesame seeds

Instructions

  1. Spiralize your courgettes.
  2. In a small blender blitz the sauce ingredients together until you have a runny mixture.
  3. In a large wok or pan heat the sesame oil, before sautéing the courgettes for 3-4 minutes until cooked to your liking. Add in the sauce and cook for a further 2 minutes.
  4. Serve with the spring onions and sesame seeds as a garnish and enjoy!
