Quinoa Puff Squares

Quinoa Puff Squares – these are just like rice crispy squares only better!!
Be careful though – you may find yourself licking the bowl…!! It’s too good to waste even a pinch!!

This recipe is Gluten Free, Dairy Free & Vegan.

Quinoa Puff Squares

Print This
Serves: 8 Prep Time: 10 Minutes Cooking Time: 10 Minutes

Ingredients

  • Base layer: 4 1/2 cups popped quinoa
  • 1 cup coconut oil, melted
  • 1/4 cup cashew butter
  • 1/4 cup hazelnut butter
  • 1/2 cup agave
  • 2 tsp vanilla
  • Top layer: 200g dark chocolate of your choosing
  • 2 tsp coconut oil
  • 3 tsp cashew butter

Instructions

  1. In a large bowl combine all of the liquid ingredients for the base layer. 
  2. Slowly fold in the quinoa pops and mix until all of the pops are nicely coated. 
  3. Add the mixture to a baking dish and spread out evenly before placing in your fridge until solid. 
  4. To make the top layer simply melt the chocolate and stir in the coconut oil and cashew butter. 
  5. Pour the chocolate over the quinoa layer and place in the fridge until set. 
  6. Finally, slice into squares and enjoy!!
