Mushroom & Egg Skillet

Mushroom & Egg Skillet

A brilliant breakfast made in minutes with this one-pan wonder!

Mushroom & Egg Skillet

Serves: 2

Ingredients

  • 100g button mushrooms
  • 80g spinach
  • 2 eggs
  • 1 clove garlic
  • Cracked black pepper
  • Olive oil

Instructions

  1. Begin by slicing the mushrooms into thin strips.
  2. Heat a large pan with 1 tsp of olive oil.
  3. Add the mushrooms with a large pinch of pepper and saute for 3 minutes until they start to become golden.
  4. Add the garlic, spinach and cook for a further 2 minutes until the spinach is wilted.
  5. Reduce the heat and crack the eggs on top of your mixture and cook for a further 4-5 minutes until the eggs are cooked to your liking. Serve and enjoy!

This veggie frittata is one of my go tos, let me know if you try it!! 3-4 large eggs 1 avocado 8-10 Santini or cherry tomatoes 1 bell pepper Large handful of collard greens 1 tsp hot chili flakes (or more if you’re in the mood to spice things up!!) 1/2 tsp of garlic granules Small handful of fresh corriander Oil of your choice Pinch of coarse salt 1. Preheat your oven to 180°c/360°F. 2. Dice the avocado, half the tomatoes, and cut the pepper into small chunks. 3. Heat
