Christmas Hasselback Potatoes

I adore potatoes in all forms, hasselbacks are so simple and look so so impressive – a fab edition to your festive spread!

This recipe is Gluten Free, Dairy Free & Vegan.

Christmas Hasselback Potatoes

Serves: 4-6

Ingredients

  • 1 kg baby potatoes
  • 6 cloves of garlic, crushed
  • 8-10 sprigs of thyme, leaves separated from the stalk
  • 4-6 tbsp olive oil
  • Coarse sea salt and cracked black pepper

Instructions

  1. Preheat your oven to 200°c.
  2. Working from one end of the potato to the other make thin slices three-quarters of the way through the potatoes a few millimeters apart.
  3. Place the potatoes on a baking tray. Mix the oil, garlic, and thyme together with some coarse sea salt and cracked black pepper before patting onto the potatoes; ensure that some of the oil is on the bottom to stop them from sticking.
  4. Bake in the oven for 30–35 minutes until golden and crispy, basting halfway through. Serve and enjoy!
