These Prawn and Mango Lettuce Cups have just 3 quick and easy steps and you have the most delicious summer bites!

Large handful of mango slices (120g)
1/2 red chilli
3 cloves of garlic
1/4 tsp smoked paprika
1/2 red onion (45g)
Juice and zest of one lime
15-20 large king prawns (130g)
Large handful of fresh coriander, chopped
1 tsp coconut oil
Coarse salt & cracked black pepper
1 head of baby gem lettuce, separated into leaves
- Slice the mango into small chunks and add to a large bowl with the chilli, onion, lime, salt & pepper.
- In a large griddle pan heat the coconut oil with garlic and saute for a few seconds before adding the prawns, sprinkle over the smoked paprika and cook for 2-3 minutes.
- Load up your lettuce cups, top with coriander & serve!
