This is the perfect thing to whip up when you slice into an avo that isn’t quite ripe. There is nothing more upsetting than the feeling when that happens but the good news is these bad boys are your answer! Baking them makes them so soft and delicious & the crunchy coating is such a fab pop of flavour.

Crunchy Coated Avocado Fries

- 2 slightly firm avocados
- 1 large egg
- 1/4 cup almond flour or ground almonds
- 1 tsp Piri Piri seasoning
- Pinch garlic granules
- 1 tsp Italian herb seasoning
- Salt & black pepper
Instructions
- Pre-heat your oven to 200°c/ 390°F.
- Slice the avocado into ‘fries’.
- In a small bowl whisk the egg, in another bowl combine the ground almonds & seasonings.
- Dip each piece of avo into the egg, then into the almond mix and onto a baking tray.
- Complete until all of the avo fries are nicely coated.
- Bake in the oven for 15-20 minutes until golden and crispy, flipping halfway.
- Serve and enjoy with your fave dip 🙂
