Turkey Lettuce Bowls with Cauliflower Rice

- 500g lean turkey mince
- 5 spring onions, finely diced
- 1 beef tomato, diced
- 150g broad beans
- 1 pepper, diced
- 1 head of little gem lettuce, separated
- 1 tsp cumin
- 1 tsp ground coriander
- 1 tsp garlic granules
- Pinch of coarse salt
- ¼ cup Frank's Red Hot
- 1 tsp coconut oil
- 2 servings of cauliflower rice
Instructions
- In a large pan heat the coconut oil.
- Begin by sautéing the spring onions, tomato & pepper for 2-3 minutes.
- Next, add the turkey mince and herbs and allow to cook.
- Finally, add the broad beans & hot sauce, season to taste and cook for a further 4-5 minutes until the turkey is fully cooked.
- In the meantime prepare the cauliflower rice, according to the instructions on the packet, by removing it from your freezer and placing it printed label side up in your microwave for 3 minutes.
- Once the cauliflower rice is cooked, load up the lettuce cups with cauliflower rice and turkey mince, serve and enjoy!
