Crispy potato cubes are one of my signature dishes – I love them and this recipe is a great way to incorporate them into your breakfast routine. You can do a mix of white and sweet potatoes, even add in some carrot and parsnip – any root veggies that you fancy.
If you have leftover cubes from dinner – simply heat them up and head straight to step 4!
