Blissful pancake stack

There is nothing that I love more than a leisurely brunch on a Sunday afternoon, these pancakes are so simple and delicious – the perfect addition to any table! Whip up a batch and stack them with your favourite toppings!


2 eggs
1/2 tsp vanilla essence
1/4 cup agave
1/2 cup water

1 1/2 cups ground almonds
1/2 tsp baking soda
Pinch of salt

Assorted toppings:
Flaked almonds
Shredded coconut
Nut butter
Drizzle of agave
Anything you like!

Coconut oil or ghee for cooking


  1. Place all of the wet ingredients in a blender and blend until smooth.
  2. Add the dry ingredients and blend until a batter has formed.
  3. Heat a pan with a small amount of oil/ghee and fry the pancakes until golden brown.
  4. Stack the pancakes with layers of toppings, drizzle with agave – serve and enjoy!
