Cracked black pepper

Guac ingredients:
2 avocados
1/2 red onion, finely chopped
1/2 jalapeño, finely chopped
1/2 beef tomato, finely chopped
2 cloves of garlic, minced
Handful of fresh coriander, finely chopped plus extra to serve
Juice of 1/2 lime

1 large white onion, cut into strips
2 peppers, cut into strips
1 tbsp of your chosen oil

Lime wedges to serve

  1. Preheat your oven to 220°c/428°F.
  2. Taking the whole cauliflower, chop it into small rice like pieces.
  3. In a large bowl combine the olive oil, cayenne pepper, cumin, salt and chili powder.
  4. Add in the cauliflower and mix until nicely coated.
  5. Lay the cauliflower out on a baking tray and place in the oven for 25-30 minutes until golden, cooked through and slightly crispy.
  6. While the cauliflower is in the oven heat a large pan with some olive oil and add the white onion, cook for 3-4 minutes before adding in the peppers. Reduce the heat and allow to cook away slowly until you are ready to serve.

  10. Toss the red onion and tomato through the cauliflower and you are ready to serve!
  11. Plate up your rice with a big dollop of guac, the sautéed peppers and onions, some lime wedges and enjoy!
