Christmas is coming and I cannot wait! I’m so looking forward to taking some time off to relax and enjoy spending time with my family and friends!
I will be completely honest and say that I won’t be taking on the cooking of the turkey this year – Christmas dinner is my dad’s speciality but I will be helping out with some delicious side dishes!
This cranberry sauce is the perfect accompaniment to your Christmas feast, I have loved cranberry sauce for as far back as I can remember and now you can enjoy an extra spoon or two with none of the guilt!
This recipe is Gluten Free, Dairy Free, Vegan, Paleo & can be adapted to suit Whole 30.
200g fresh cranberries
1/4 cup fresh orange juice
1/4 cup maple syrup – optional extra (omit for whole 30)
Method:
- In a small pot add the cranberries and the orange juice.
- Bring the mixture to the boil before reducing to a simmer.
- Simmer for 25-30 minutes until the cranberries have stewed nicely and a thick sauce has formed.
- At this point stir in 1/4 cup of maple syrup or until it is sweet enough for your liking and serve!
This sauce will keep in an air tight container, in your fridge for up to a week.
