Rainbow carrots are one of my favourite autumn veggies, these Curried Rainbow Carrots are the perfect accompaniment to your Sunday roast and work great in a lunch box for mid-week meals on the go too!

- 500g rainbow carrots
- 1/2 tbsp olive oil
- 2 tsp curry powder
- Pinch of coarse salt
- Preheat your oven to 200°c / 390°F.
- In a large bowl combine the oil and the curry powder.
- Toss the carrots in the oil and curry powder, lay out on a baking tray and sprinkle with some coarse salt.
- Bake in the oven for 25-30 minutes until fully cooked and beginning to crisp.
- Serve and enjoy!
