Best EVER Chicken Legs

Best EVER Chicken Legs

I adore roast chicken – there is no better way to cook chicken – it’s so juicy and packed full of flavour! Leg meat is my absolute favourite and they roast so wonderfully!

I was actually just cooking these to have on hand during the week but they turned out soo tasty that I had to jump on and share them with you too!

This recipe is Gluten Free, Dairy Free, Paleo & Whole30

Best EVER Chicken Legs

Print This
Serves: 4 Prep Time: 5 Minutes Cooking Time: 45 Minutes

Ingredients

  • 4 chicken legs, skin on bone in
  • 1 tsp powdered vegetable bouillon
  • 2 tbsp grass fed butter, cold
  • 1 tsp your chosen oil
  • Salt & pepper

Instructions

  1. Preheat your oven to 200°C / 400°F. 
  2. Dice up the butter and slot it in under the chicken skin.
  3. Mix the oil and bouillon together in a small bowl and rub over the chicken. 
  4. Place on a baking tray and sprinkle with coarse salt and pepper. 
  5. Roast in the oven for 40 minutes until the chicken is fully cooked and the skin is golden and crispy. 
  6. Remove the chicken from the oven, baste the skin with the juices. 
  7. Turn your grill/broiler setting on your oven to high and place back under the grill/broiler for 2-3 minutes until perfectly crispy! Serve and enjoy!!
