I absolutely adore chicken thighs and I feel like they can sometimes be over looked in favour of chicken breasts as they are seen as too trouble some, too fatty or too time consuming, but trust me once you try these out you will be converted!!!

- 4 chicken thighs - skin on, bone removed
- 1 tsp of coconut oil
- Good sprinkle of coarse salt
1.Add the oil to a large pan and heat until piping hot.
2.Sprinkle the salt on the skin of the chicken and place it skin sit down on the pan.
3.Cook on high for 4-5 minutes until the skin is golden, crispy and delicious before flipping, reducing the heat and cooking on the other side for a further 5 or so minutes until the chicken is fully cooked.
4.Serve and enjoy with your chosen sides
