These Chili Prawns with Coriander & Lime are delicious served hot or cold! I’m absolutely in love with them! The excess juice is great mopped up by some sweet potato fries or even throw some zoodles into the pan for the last few minutes of cooking – a meal in minutes!!

200g tiger prawns
Juice of one lime
1/2 red chili, finely chopped
Large handful of coriander, finely chopped
1 tsp coconut oil
Method:
- In a small bowl combine the lime, chili and coriander.
- Heat a small frying pan with the coconut oil and add the prawns.
- Cook for 2-3 minutes before turning over and adding the dressing – cook for a further 2-3 minutes or until the prawns are fully cooked.
Remove from the heat and enjoy!
