Family dinner with a twist… Try these delicious Meat-Free ‘meatballs’

written by thewonkyspatula February 3, 2020
Family dinner with a twist… Try these delicious Meat-Free ‘meatballs’

Now this is a recipe to get excited about! This is a fun pick and mix style dinner that the whole family will love.

Using Birds Eye’s Green Cuisine range, which is the perfect alternative to meat, these meatballs make a seriously tasty but handy and quick dinner.

I am loving trying out all of the different products in the range, and coming up with new and exciting ways to get more veggies into my diet.

This recipe for Meat-Free Swedish Style Balls is great for doing just that! This is the ideal kind of dinner to pop in the middle of the table and let the whole family dig in!

I’m a fan of traditional cabbage rolls and this DIY method is a great way to let your little ones try out cabbage in a new and exciting way. It’s also great the next day as leftovers, which you could bulk it up with some rice or pasta to use up any extra sauce!

The Green Cuisine range is powered by plants with each item in the range made of pea protein which is a high-quality protein that is easy to digest.

Each product is also packed full of iron and tonnes more benefits such as keeping you feeling fuller for longer. With a unique combination of herbs and spices, and a seriously moist texture, the Green Cuisine range is both mouth-wateringly delicious and totally different to anything else on the meat-free market.

Also available in the Green Cuisine range are burgers and sausages, which are super versatile and can be used in an array of different recipes, without any compromise on taste.

For this recipe, you will need…

Ingredients:
For the cabbage rolls:
6-8 large cabbage leaves – separated from the cabbage with the large vein removed

For the ‘meat’ balls:
1 packet of Green Cuisine Meat-Free Swedish Style Balls
1 large onion, chopped finely
2 cloves of garlic, minced
½ red chilli finely sliced
1 shallot, finely sliced
2 tins of chopped tomatoes
1 tin of tomato puree
1/4 cup honey (60ml)
1/4 cup balsamic vinegar (60ml)
Pinch of coarse salt & black pepper

Before you get to the table:
Large handful of chopped parsley leaves to garnish

Method:

  1. Heat a large pot of boiling water and place the cabbage leaves in batches for 3-5 minutes until they begin to cook down and are pliable.
Set aside to bring to the table once the “meat” balls are ready to go!
  2. In a large pan, sauté down the onion and shallots with the garlic and chilli until they begin to soften and are translucent.
  3. Once they have begun to sauté down add the additional ingredients & seasoning. Bring the mixture to the boil and simmer for 5-10 minutes before pouring into a large ovenproof dish and adding the meatballs.
  4. Bake in the oven at 200 for 15-20 minutes, garnish with some parsley before bringing to the table to serve and enjoy with your cabbage leaves!

This is a super simple recipe that can be enjoyed by the whole family and is a great way to get more veggies in and introduce new items like cabbage, whilst also reducing meat-intake and maintaining taste.

It’s so important for children to see where their foods come from so be sure to get them involved in the cooking process, whether it’s washing the veggies, popping the ‘meat’ balls into the dish – bringing them on the journey to the finished dish is a super way to open their minds to try new things.

The Green Cuisine range retails at €2.99 and is on sale at Tesco, Dunnes, Supervalu, and all big supermarkets.
