Smashed Avocado & Eggs in honor of National Egg Day!
This a delicious breakfast any day of the week! I particularly love sitting back and relaxing with it on a Sunday morning in my PJs with a huge mug of green tea – absolute perfection!
These smashed avo & eggs act as the base for so many great breakfasts so don’t be shy! Bulk it up with some smoked salmon/ sweet potato or if you’re really looking for a boozy brunch why not have both?!
This recipe is Gluten Free, Dairy Free, Paleo & Whole 30 Approved.
Per person:
2 Medium Eggs
1 Avocado
Lemon or Lime juice
1 spring onion, finely chopped
Salt, pepper & spices of your choice
Method:
- Boil a pot of water, once it has come to a rolling boil add in your eggs and cook for 5-6 minutes (this will give you slightly running yolks while also having the white completely cooked – which to me is perfection!!) If you like yours a little more runny go for 4 mins and likewise if you like them hard leave them in for 7-8.
- Remove the eggs from the water and allow to cool slightly.
- In the meantime, smash up you avocado and drizzle with some lemon or lime juice and if desired sprinkle in some spices. I love adding a little bit of cayenne to liven it up!
- Peel and slice the eggs, place them on top and sprinkle with some freshly ground black pepper and the spring onions.
- Serve and enjoy!
