Smashed Avocado & Eggs

Smashed Avocado & Eggs in honor of National Egg Day!

This a delicious breakfast any day of the week! I particularly love sitting back and relaxing with it on a Sunday morning in my PJs with a huge mug of green tea – absolute perfection!

These smashed avo & eggsΒ act as the base for so many great breakfasts so don’t be shy! Bulk it up with some smoked salmon/ sweet potato or if you’re really looking for a boozy brunch why not have both?!

This recipe is Gluten Free, Dairy Free, Paleo & Whole 30 Approved.

Per person:
2 Medium Eggs
1 Avocado
Lemon or Lime juice
1 spring onion, finely chopped
Salt, pepper & spices of your choice

Method:

  1. Boil a pot of water, once it has come to a rolling boil add in your eggs and cook for 5-6 minutes (this will give you slightly running yolks while also having the white completely cooked – which to me is perfection!!) If you like yours a little more runny go for 4 mins and likewise if you like them hard leave them in for 7-8.
  2. Remove the eggs from the water and allow to cool slightly.
  3. In the meantime, smash up you avocado and drizzle with some lemon or lime juice and if desired sprinkle in some spices. I love adding a little bit of cayenne to liven it up!
  4. Peel and slice the eggs, place them on top and sprinkle with some freshly ground black pepper and the spring onions.
  5. Serve and enjoy!IMG_8715
