Roasted Green Beans with Cranberries & Macadamias

Roasted Green Beans with Cranberries & Macadamias – Christmas is coming! 15 days to go, it’s my absolute favourite time of year and I can’t wait to share some new and old Christmas cracker recipes with you! Be sure to check out my Festive Favs tab to get in on all of the action – past and present! 

Green beans are something that I’ve started to eat in the last week or so and I honestly cannot get enough of them – they are delicious! 

This recipe is Gluten Free, Dairy Free, Paleo & Whole30.

Roasted Green Beans with Cranberries & Macadamias

Print This
Serves: 4 Prep Time: 10 Minutes Cooking Time: 40 Minutes

Ingredients

  • 500g green beans, ends trimmed
  • Large handful of dried cranberries
  • Large handful of macadamia nuts
  • 3 cloves of garlic, thinly sliced
  • 1/2 tbsp olive oil
  • 1 tbsp grass fed butter/ghee
  • Large pinch of coarse salt & black pepper

Instructions

1. Preheat your oven to 200°c/395°F. 2. In a large bowl toss the green beans and garlic in the olive oil.  3. Lay out on a baking tray and sprinkle with the salt and pepper.  4. Bake in the oven for 25 minutes, flipping occasionally.  5. Remove from the oven add the grass fed butter/ghee, cranberries & macadamias and bake in the oven for a further 10-15 minutes until the cranberries are nice and plump. Serve and enjoy!

Preheat your oven to 180°c/360°F. 2. Dice the avocado, half the tomatoes, and cut the pepper into small chunks. 3. Heat
