Quick & Easy One Pan Ratatouille – In my mind ratatouille, should always be a glamorously prepared side dish where all of the vegetables are beautifully sliced and arranged in a fan shape. In reality, does anyone really have time for such things?!! Maybe the answer to that is yes… but then I ask you – does anyone actually have the patience?!
This straight up no fuss Ratatouille, is packed full of flavour & colour – the perfect side dish to any meal. It keeps really well so it’s also perfect for meal prep, I tend to make a batch for dinner and then portion out the leftovers 🙂

Quick & Easy One Pan Ratatouille

- 5-6 (1kg) bell peppers
- 4 stalks of celery
- 4 cloves of garlic
- 1 red chilli
- 10-15 baby tomatoes
- 2 courgettes
- 1 white onion
- 4 shallots
- 1 aubergine
- 1 tsp olive oil
- A sprinkle of coarse salt & black pepper
- A handful of fresh basil
Instructions
- Preheat your oven to 200°c/ 390°F.
- Roughly chop all of the vegetables and add to a large roasting tray.
- Drizzle over the olive oil and toss until all of the vegetables are nicely coated, adding more oil if desired.
- Sprinkle with the salt, pepper & basil before adding the tray to the oven.
- Bake the vegetables for 45-50 minutes, until golden and cooked through, serve and enjoy!
