Quick and Easy ‘Rice’ Bowl for One

Hello and welcome to my first post of 2019! It’s hard to believe that this time 5 years ago I was about to embark on my culinary journey and fall in love with CrossFit, little did I know that a few months down the line I would set up my Instagram account and eventually this little site!

I shared a post on Instagram on New Years Eve about how I do not undertake New Years Resolutions – rather I like to set goals for the year ahead. I’m never one for New Year, New Me when it comes to my diet either, but I will say this after Christmas I do enjoy getting back into a routine of eating nutritious meals that nourish my body. This recipe is the essence of my January eating habits – simple, fresh & full of colour. I hope you enjoy it!

This recipe is Gluten Free, Dairy Free, Paleo & Whole30.


Quick and Easy 'Rice' Bowl for One

Print This
Serves: 1 Prep Time: 10 Minutes Cooking Time: 10 Minutes

Ingredients

  • 1 chicken breast, cut into strips
  • 1/2 bell pepper, finely chopped
  • Small handful of red cabbage, finely sliced
  • 1 spring onion, finely sliced
  • 2 florets of broccoli, diced
  • 1/2 cup of cauliflower, riced
  • 1/4 tsp curry powder
  • 1/4 tsp ground cumin
  • 1/4 tsp garlic powder
  • Large handful of fresh coriander, finely chopped
  • 1/2 tsp coconut oil
  • Salt and black pepper

Instructions

  1. Place the chicken strips on wooden skewers and toss in the cumin & curry powder with a sprinkle of coarse salt. 
  2. Add 1/2 of the coconut oil to a griddle pan and cook the chicken on high until fully cooked, about 4 minutes a side. (or if you have a George Foreman grill, you can pop it in there for 6 minutes) 
  3. In the meantime, steam the cauliflower rice and heat a large pan with the remaining coconut oil. 
  4. Saute the pepper, broccoli, cabbage & spring onion with the garlic powder for 3-4 minutes until cooked to your liking, I like to keep a bit of bite in mine, adding a splash of water to speed up the process. 
  5. Toss the cauliflower rice in a bowl with the coriander & some cracked black pepper, add the veggies & chicken, serve and enjoy!
