Broccoli Tots

Instructions

1. Preheat the oven to 200°c/ 392°F.
2. Boil or steam the broccoli until tender.
3. Drain off any excess water and add to your food processor. Blitz until you have a rice like consistency and then set aside.
4. Boil the potato for 10-12 minutes until tender, strain off the water and mash.
5. In a large bowl combine the broccoli, potato, spices and egg, season and mix thoroughly.
6. Use your hands to squeeze and shape the mixture into “tots” (this recipe makes 12).
7. Lay them out on a baking sheet lined with parchment paper.
8. Bake for 10 minutes, drizzle a little olive oil over the tots and bake for a further 10 minutes before turning.
9. Bake on the opposite side for a further 5-10 minutes, until golden and crispy, serve with some homemade mayo or hot sauce for dipping and enjoy!
