The Naked Salad – A controversial non-recipe recipe.
I adore fresh raw vegetables and constantly have a supply in my handbag for snacking on the go, strangely enough (I didn’t think it was strange until a recent encounter in a salad bar!), when I go for a salad I like to keep things super simple and always opt for flavoured chicken and naked veg. So here you have it The Naked Salad! Of course add olive oil/balsamic/whatever your jam is but personally, I feel that if the veg is fresh and sliced with care, that’s all you need!

The Naked Salad

- 1 pepper, finely diced
- 1 stick of celery, finely diced
- 2 large handfuls of mixed leaves
- 6-8 Santini tomatoes, halved
- 1 large chicken breast
- 1/4 tsp piri piri seasoning
- 1/3 tsp coconut oil
Instructions
- Lay out your salad ingredients on a nice plate.
- Heat the coconut oil in a pan & season the chicken with the piri piri.
- Cook the chicken breast for 4-5 minutes a side, until fully cooked through.
- Allow the chicken to rest for 2-3 minutes before slicing and adding to the salad.
- Serve and enjoy!
